Ingredients
For the Casserole:
4 boneless, skinless chicken breasts (or thighs, if preferred)
1 cup long-grain white rice (uncooked)
1 can (10.5 oz) cream of chicken soup (or cream of mushroom, if you prefer)
1 cup chicken broth (low-sodium)
1/2 cup sour cream (or Greek yogurt)
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper, to taste
1 cup shredded cheddar cheese (optional, for topping)
For the Topping (Optional):
1/2 cup crushed buttery crackers or breadcrumbs (optional, for crunch)
